Wasabi Pistachio Crusted Cod Recipe
I was craving fish recently but also wanted to challenge myself to make it more interesting which is how this wasabi pistachio crusted cod recipe came about.
Most recipes that involve a crust on a fish include bread crumbs or panko crumbs but I was determined to avoid using any breading. The wasabi was actually my mom’s idea, originally I was thinking of doing a mustard sauce. Boy am I happy she recommended wasabi though! And don’t be afraid, the wasabi you buy at the grocery store is actually quite mild and adds just a tiny amount of kick. In fact, when you are mixing your sauce, keep trying it to determine how much wasabi you actually want to taste.
I bought a wasabi paste from Whole Foods for this recipe but I think next time I want to try either the powder or fresh wasabi from an Asian supermarket. Like I said, the paste didn’t really do it for me in terms of the flavor I was looking for. You see which one I used which is also available on Amazon here.*
Another tip, try and buy fresh cod vs frozen. I’ve tried both in the past and fresh always tastes so much better. And make sure you buy “wild” fish and not “farm raised”. The cod I used was purchased at Whole Foods and said it was wild caught from Iceland. It came out so perfectly cooked and not dry that I was even in shock.
Honestly this is one of my favorite fish recipes ever and is a delicious treat to make at home that really requires minimal ingredients. If you make this for someone else or guests, they are sure to be wow’ed! I hope you guys like it as much as I did!
INGREDIENTS
Fresh Cod (2 large pieces then cut making 4 pieces, about 1.6lbs)
Wasabi Paste (1 tsp)
Mayonnaise (1 tbsp)
Soy Sauce/ Tamari (1/2 tsp)
Pistachios (raw, crushed, 1/2 cup)
INSTRUCTIONS
- Preheat oven to 400F and line pan with parchment paper.
- Rinse fish and cut into smaller pieces if necessary.
- In a bowl mix the mayo, wasabi and tamari. Taste to test.
- Pat dry the fish and spread the sauce on both sides of the fillet and then leave face up on the baking dish.
- Use a food processor or blender to crush your raw pistachios. Next sprinkle them over the fillets. Gently pat the pistachios into the fish that was covered with the wasabi sauce.
- Bake for 17 minutes and then broil for another 5 minutes until the pistachios turn golden.
- Enjoy!!

I didn’t realize cod could taste this good! I’m not really a wasabi fan, but I gave this a shot because my husband loves both wasabi and pistachios. It was EXCELLENT. I’m planning to make this for Christmas Eve, too. Thanks for the fantastic recipe!
