The Best Fish Tacos
Yup, you heard me right. These are the best fish tacos. Period.
That might be a bold statement to make but have you tried them?? Okay, here is the secret, fish tacos don’t need a lot of trimmings. Here are the basics which make it very flavorful- avocado, cabbage and hot sauce (if you so desire, if not then lemon works wonders).
Fish tacos are also super healthy if you skip the taco part aka the tortilla. I actually did make mine with Trader Joe’s Carb Savvy Whole Wheat Tortillas which are a great low carb option. If you don’t want the extra carbs then just wrap it in lettuce, Boston or Butter Lettuce are my fav.
I’ve been buying my cod fresh from Whole Foods. You want to make sure that when you are buying fish, it always says “wild” and the country where it was caught. Also, fish should never have a fishy smell if it is fresh. You can use different fish options here but I feel like Cod does work best with tacos. Mahi Mahi is another great fish option. Whatever you do, just avoid Tilapia- it is one of the most genetically engineered fish and is very toxic and has been linked to Alzheimer’s.
So let’s get started, first I’ll explain how to prepare the fish and then you basically add the toppings. I like to prep the toppings while the fish is baking so that once it is ready you basically have a little make your own taco bar.
INGREDIENTS
Fresh Cod (can be frozen but doesn’t taste as good) 1lb (to feed 2 people, 1 1/4lb to feed 3; 3 tacos per person)

Lettuce (Boston)
INSTRUCTIONS
- Preheat oven to 400F.
- Rinse fish with water and season with pepper, lemon and chili powder (let sit a few minutes).
- Drizzle fish with olive oil and bake for 20 minutes.
- Optional step- for a seared fish in tacos, once baked, add to pan for a few minutes. No oil for nonstick or minimal olive oil for other pans.
- *Tip- Once oven is turned off, you can put your tortilla in there for a few minutes to warm it up.
- Shred one cup of red cabbage and mix with lemon juice, salt and pepper.
- Cut avocado or mash in a bowl and drizzle with lemon to keep from browning.
- Once you have all your ingredients, put the lettuce in the tortilla wrap followed by the fish, avocado, cabbage, pickled onions and jalapenos and drizzle with hot sauce or spritz with fresh lemon juice!
