Greek Inspired Salad with Kefir Tzatziki Dressing
So I was recently approached to do an Instagram live for Lifeway Kefir and it took me no time to realize that I wanted to do a Greek inspired salad with kefir tzatziki dressing. If you follow me on instagram, you know that I love basically all Mediterranean foods and I was so excited to make this one!
If you aren’t familiar with kefir, let me introduce you! Kefir is a cultured milk drink that is high in protein, calcium and vitamin D. It is rich in probiotics which support gut health. Gut health is very important because our gut wall houses about 70-80% of the cells that make up our immune system. In short, Healthy Gut = Healthy Immune System!
So let’s get to this yummy recipe! I’m calling it “Greek inspired” because it has a few extra ingredients that a typical Greek salad wouldn’t include.
INGREDIENTS
Tzatziki Dressing
Lifeway Kefir (plain, 1/2-1 cup)
Cucumber (1/2, shredded)
Garlic (1 clove put through presser)
Olive Oil (1 tablespoon)
Lemon (1/2, juiced)
Salt
Pepper
Salad
Kale (3 stalks)
Cucumber (1/2, sliced)
Radishes (2, sliced)
Red Onion (sliced)
Tomatoes (2 small/medium, diced)
Kalamata Olives (around 10)
Feta (1/4 cup, cubed)
Lemon (1/2)
INSTRUCTIONS
- Start with the dressing and mix all ingredients together in a cup or bowl. Let sit while you make the rest of the salad.
- Chop up the kale and add to a bowl.
- Spritz the juice of half a lemon over the kale and massage with hands. This softens the kale.
- Add the balance of the ingredients and top with more olive oil and then the dressing at the end. Enjoy!
