Spaghetti Squash Pasta Two Recipes
You know those recipes you make so much that you tire of them and then completely forget about them? That is what happened with this veggie pasta dish so now it’s back and better than ever because I have two recipes for you! Here are two spaghetti squash pasta recipes!
The best part is that you technically don’t need to make two separate dishes. The amount of “pasta” you get from one spaghetti squash can be enough for two people so you only need to cook one. The sauces are also so easy to make AND you can mix them right in the shell. I love the idea of using the shell as the bowl. It looks cute and saves you time and energy when cleaning! Who doesn’t love that?!
There are a few different ways to cook your spaghetti squash. Some people bake it whole first and then cut it. Some cut it and then spoon everything out and then bake. For me the way that works best is first cutting it in half and baking for 15 minutes face down. Then you scoop out the seeds/center and then bake again for another 20 minutes. Even if you don’t get all the seeds the first time, you can easily take them out after so don’t stress over that!
INGREDIENTS
Spaghetti Squash (1 whole)
Olive Oil
Parmesan Cheese (1/3 cup, grated)
Tomato Sauce (1/4 cup, heated)
Salt, Pepper
INSTRUCTIONS
- Preheat oven to 400F and line baking pan with parchment paper.
- Wash and cut spaghetti squash in half. Put face down on parchment paper and bake for 15 minutes.
- Take out of oven and carefully scoop out the middle part with the seeds. Don’t worry if you can’t get all the seeds, they will come out later.
- Drizzle olive oil, salt and pepper on the spaghetti squash and place back on pan face down. Bake for another 20 minutes.
- A fork should insert easily into the squash now, if it doesn’t add another 5-10 minutes and monitor.
- Once cooked, take a fork and start going over the squash to take out the “spaghetti.” If there are any seeds left, take them out at this point to.
- Leave the “spaghetti” inside the squash shell.
- Now we will make each side with different seasonings/ flavors.
9. To one side add 3/4 of the grated parmesan cheese, drizzle olive oil, and add a little salt and pepper. Mix well inside shell.
10. To the other side you want to add in the heated tomato sauce, balance of parmesan cheese, salt and pepper. Mix well inside shell.
