    Healthy Vegetarian Thanksgiving Recipes

    One of the most annoying things is searching for recipes and having to go to 10 different websites to find them. I’ve been posting a lot of Thanksgiving themed recipes the past two weeks and thought it would be helpful to have them all in one place! Turkey is a big part of Thanksgiving but what happens when you don’t eat it like me? These healthy vegetarian Thanksgiving recipes will ease your mind on what to make!

    Starters

    A yummy heart warming soup is a great start to any meal. This Butternut Squash Soup is filled with wholesome ingredients and vitamins! Click here for the recipe.

    Mains

    The Perfect Fall Salad is so hearty that I would consider it a “bowl” vs a “salad.” It can be considered a side dish but I actually think it is better suited as a main dish. Click here for the recipe.

    One of my all time favorites and what I’ll be having on Thanksgiving is Spaghetti Squash! So easy to make and you can play around with the sauces. Even the turkey eaters will be jealous. Click here for recipe!

    Sides

    This is definitely my favorite category. I could honestly eat only sides and be happy.

    One of my favorites are these roasted potatoes. I made them with an avocado dip that I couldn’t get enough of! See below!!

    Next up we have cranberry sauce. You CANNOT be without this side and once you get to know this recipe you’ll realize you will never buy store bought ever again. Healthy and easy cranberry sauce recipe here!

    And to round it off we have a holiday favorite- Roasted Chestnuts. This is something I attempted last year but was too late in the season. Chestnut season is right around now (Christmas is too late). They require no additional ingredients and are a fun treat and activity since you have to peel them! Click here for Roasted Chestnuts!

Whenever I eat this salad peoples think it’s a Cesar Salad! Close, but not quite! I actually think it tastes better and I know exactly what I’m putting into it!

*for homemade roasted sunflower seeds aka “the crunch”- put raw (unsalted, unroasted) sunflower seeds on a dry pan and add cayenne pepper- let heat up and roasted about ~3 minutes or until golden!

I used to get headaches all the time but since I started eating intuitively and paying attention to my body (listening when it needs rest, feeding it supplements that it needs and avoiding foods that don’t make me feel good), my headaches are very rare!
On the occasion that I do get one, I wanted to something that was natural so I gave White Willow Bark drops a try about a year ago. I was shocked they worked!!
I keep a bottle in the house and then take one with me in my bag when I’m out of the house or for traveling.

•white willow bark contains salicin, which is a chemical similar to aspirin
•the herb itself has anti-inflammatory compounds
