Delicious Zucchini Boats
These delicious zucchini boats are very versatile and make what could have a boring meal, fun. You can choose a multitude of different ingredients to put in the scooped out zucchini and once done, it looks fancy.
I opted for (mostly) veggie ones here and added quinoa to make it heartier. The vegetables used here are onion, red peppers, tomato and zucchini (that you scoop out). I also added in bacon pieces to make it more flavorful and topped it with shredded mozzarella cheese.
What’s great is that you can basically use what you have in your fridge. A mushroom and tomato mix with cheese is delicious. If you eat meat then grass-fed ground beef (cooked ahead of time) with some onions and mushrooms would also be yummy.

Ingredients
Zucchini (2)
Red Onion (1/4, chopped)
Red Pepper (1/3, chopped)
Tomato (1 small, chopped)
Bacon (1/4 cup, chopped and fried/baked)
Quinoa (1/2 cup)
Black Pepper
Shredded Mozzarella (1/4 cup)
Instructions
- Preheat oven to 375F.
- Wash zucchini and cut in half down the middle.
- Using a peeler, slice off a strip on each back so it can lay flat.
- Using a knife and melon scooper, scoop out the inside of the zucchinis and chop.
- Cook quinoa according to directions.
- Add onions to pan with a little olive oil until they start to cook.
- Next add in red peppers and quinoa. Cook for about 2 minutes.
- Next add in chopped tomato and zucchini insides to pan along with cooked bacon.
- Season with black pepper.
- Cook for about 2 minutes.
- Scoop out the mixture and place into hollow zucchini with a spoon.
- Cover with shredded mozzarella.
- Bake for 20 minutes and enjoy hot!
