    Whipped Avocado Kefir Dip

    This whipped avocado kefir dip was actually created to go with this roasted potato recipe but then I realized it can have many uses! My dad actually used it for his grilled chicken the other day and I was thinking how amazing it would be with roasted cauliflower as well!

    This recipe is super easy to make and requires minimal ingredients. It also has kefir as a main ingredient which I absolutely love since it is so good for your gut! For more on my kefir obsession, check out my recipes here.

    What you need for this one is either a food processor (what I used), a blender or a good arm and a whisk. You want to make sure the avocado is very blended, that is what will make it whipped.

    INGREDIENTS

    Avocado (1)
    Kefir (1/4 cup)
    Nutritional Yeast (1 tablespoon)
    Cayenne Pepper
    Salt
    Black Pepper

    INSTRUCTIONS

    1. Add all ingredients to a food processor. Start slow on the cayenne pepper, black pepper and salt and add as you taste.
    2. Blend well and then enjoy!

Whenever I eat this salad peoples think it’s a Cesar Salad! Close, but not quite! I actually think it tastes better and I know exactly what I’m putting into it!

*for homemade roasted sunflower seeds aka “the crunch”- put raw (unsalted, unroasted) sunflower seeds on a dry pan and add cayenne pepper- let heat up and roasted about ~3 minutes or until golden!

I used to get headaches all the time but since I started eating intuitively and paying attention to my body (listening when it needs rest, feeding it supplements that it needs and avoiding foods that don’t make me feel good), my headaches are very rare!
