Healthy Fig & Almond Cookies
And the journey for yummy and healthy cookies continues with these fig & almond cookies! If you don’t know, I’m basically trying different cookie recipes almost daily during this quarantine, see these so delicious tahini cookies.
I love using sweet fruit where I can instead of sugar or even honey and dried figs are an awesome substitute. You want to soak the figs prior to starting the recipe so in the morning, pour some room temp or warm water (that was previously boiled) in a cup with the figs and let sit for a few hours (minimum 2) before starting to bake.
Ingredients
Dried Figs (around 10)
Almond Flour (1 cup)
Almond Butter (3 tablespoons)
Crushed Almonds (1/2 cup)
Salt (pinch)
Mix all ingredients except for crushed almonds in a food processor until blended well. Fold in crushed almonds.
Bake at 350F for 10 minutes on one side and then flip and back for another 10 minutes.
