Asian Cucumber Salad Recipe
As I was making my delicious wasabi pistachio crusted cod recipe I was thinking what side dish would be the perfect compliment. I came up with a super simple asian cucumber salad recipe that incorporates flavors that pair very well with the wasabi you get from the cod.
I first had this type of salad in the little hole in the wall restaurant in Paris that I talk about here. It was super simple and delicious and had a little kick to it and so I decided to recreate it.
This salad takes a few minutes to make and is a nice accompaniment to a dish such as the cod. It also pairs nicely with dumplings or it could be eaten on it’s own.
INGREDIENTS
Organic Cucumber (1)
White Rice Wine Vinegar (1 tbsp)
Toasted Sesame Oil (1 tsp)
Tamari (drizzle, or about 1/2 tsp)
Red Pepper Flakes (1/2 tsp)
Sesame Seeds (1 tsp)
INSTRUCTIONS
- Slice the cucumber into even thin slices. Using a mandolin is best.
- Mix the balance of ingredients in a bowl and pour over the sliced cucumber.
- Mix well and let sit if possible. Top with sesame seeds.
