Lemon Olive Oil Cake
You’ve probably seen the olive oil cake trend which was started by Kylie Jenner. Perfectly round looking and topped with powdered sugar, the cake is not too sweet but just right. The one Kylie featured hails from Little House Confections in Los Angeles but this one… this one hails from your kitchen and is OMFG so good! This lemon olive oil cake is the perfect treat with a cup of tea or coffee and is literally the perfect density too. Oh did I mention it’s gluten and sugar free??
Now I cannot take credit for this recipe since it hails from a blogger that I follow- Mia from RASA. I followed her recipe pretty much exactly as posted except that I opted out of the salt on top at the end and I instead covered the cake with powdered sugar.
The cake was super easy to make and don’t get scared if it doesn’t rise too much- it’s not supposed to. She also uses cornmeal which I was a little hesitant too but I ended up purchasing organic cornmeal from Whole Foods and feel okay about using it (it’s not like I’ll be eating this everyday… well maybe). Not only is it easy and delicious but doesn’t it look amazing too! Wow your family and guests!
Okay one more thing- I also added the candied lemon slices on top that aren’t in Mia’s recipe. To make these combine 1 teaspoon water with 2 teaspoons sugar in a pan. Turn the heat on low to warm up. Next add in your lemon slices with the skin on and coat in the sugar and cook for about 5-10 minutes. Set out to cool.
