Healthy Chocolate Banana Bread
The other day I was craving something chocolatey (no shocker) and also had a few bananas that were VERY ripe, and so this healthy chocolate banana bread was born! I basically took my classic banana bread and added cacao to make it even more yummy!
I love chocolate chips in my banana bread which technically makes this one a “double chocolate banana bread” but my mom unfortunately does not. So here is a little trick if you have family members that have different tastes.
Your add-ins can include chocolate chips, walnuts, raisins or dried cranberries and yes, you can make half and half! Instead of mixing in any of the adds-in while the batter is in the bowl, pour the batter into the pan and then sprinkle whichever add-ins you are using to each side of the “bread.” Then use a knife or the back of a spoon to slowly blend in. I made mine half chocolate chip and half walnut cranberry.
INGREDIENTS
Ripe Bananas (3-4)
Almond Flour (2 cups)
Eggs (3-4, equal ratio to bananas)
Honey (3 tbsp)
Cinnamon (1 tsp)
Baking Soda (1 tsp)
Vanilla Extract (1 tsp)
Salt (pinch)
Cacao (1/2 cup)
Add-ins (optional)
Dark Chocolate Chips, Raisins, Dried Cranberries, Walnuts
INSTRUCTIONS
- Preheat oven to 350F and line pan with parchment paper.
- Mash up bananas with a fork in a big bowl.
- Mix honey with eggs in a smaller bowl.
- Add the honey and eggs to the bananas and mix well.
- Add in the balance of the ingredients- almond flour, cinnamon, baking soda, vanilla extract and salt.
- Mix well.
- Next add in the cacao and mix well.
- Next you have the option to add in any “add-ins” or if you are doing a half and half then mix after the batter is poured into the pan per the instructions above.
- Bake for 1 hour.
This pairs great with plain yogurt and fresh berries!
