Super Quick Homemade Noodle Recipe
In Poland it is typical that homemade broth will be served with noodles which is how I ate it there. Here in USA when I make broth I either drink it without anything in it or with bean thread noodles that I buy at Asian markets to avoid gluten. But coming back from Poland I was craving the real thing! So here is a super quick homemade noodle recipe that is a lighter version from regular pasta.
These noodles are amazing in broth or tomato soup or even on their own with a sauce! It takes a couple of minutes to cook and requires minimal ingredients that you probably already have. Feel free to have fun with this recipe. Honestly, after I make them and drain them, I like to sneak some noodles without anything. They are so light and warm and taste amazing!
INGREDIENTS
Organic Semolina Flour (1/4 cup)
Organic White Flour (3/4 cup) OR 1 cup of ONLY Organic White Flour
Eggs (2)
Salt
INSTRUCTIONS
- Mix the flour, egg and a little salt well in a bowl.
- Next knead the ingredients on a flat surface VERY WELL until the dough is very hard. Knead into a ball.
- Cover with saran wrap and let sit 15-30 min for the gluten to activate.
- Roll out with rolling pin (or with a pasta machine if you have).
- Sprinkle with flour so it doesn’t get sticky.
- Cut into wide strips and then slice into very thin strips as shown in photo.
- Bring a pot with water and salt to a boil and add your noodles.
- Boil for 3 minutes.
