Homemade Broth Recipe
Homemade broth is one of my favorite things ever to eat! Once everything has been cooked you can eat the vegetables and meat with it as a soup or just cook some noodles and eat them with the broth- how I like it!
This can be a broth made from vegetables and chicken or duck or beef. It can also be made from just vegetables but even a rare meat eater like myself, prefers a meat based one for a richer flavor.
This recipe is for a big pot that serves 4-5 people, or you can freeze the left over if you are making for less people.
Ingredients
Whole Chicken or other meat- clean well- simmer whole for one hour with just water and 3 bay leaves
Then add in the balance of vegetables and simmer for 2 hours
Carrots (4)
Leek (white part, 1)
Onion- slightly roasted on burner (1)
Celery (4 sticks)
Celery Root (1 small)
Parsley (2 small)
Allspice (5)
Ginger (1-2 inches)
Fenugreek (1/2 tablespoon)
Pepper (whole, 4-5 pieces)
Add in salt and simmer for another hour (total cook time is 3-4 hours minimum on VERY low heat)
Can be in fridge up to 2 days or can be frozen about a month, fill container up 3/4 way when freezing.
