Warm Apple Kefir Bowl
Hi friends! It’s been a little since I posted but I’m back and so excited by today’s recipe. I partnered with Lifeway Kefir again and am bringing you a warm apple kefir bowl which is perfect for Fall! I absolutely love kefir and you might remember that I partnered with them a few months ago for this delicious Mediterranean salad.
This bowl is great because you can have it for breakfast or snack during the day or even to end your day! It’s so versatile and you can really add or swap the ingredients to make it your own. Since it’s November I’m really trying to get in the Fall mood so my ingredients are definitely inspired by that.
This bowl is filled with so much yummy and healthy goodness too! We’re talking calcium, protein, vitamin D, antioxidants and zinc to name a few! I am using many delicious powerhouse ingredients that are perfect for boosting immunity too! Let’s get started!
INGREDIENTS
Lifeway Kefir Plain Flavor (1 cup)
Organic Apple (1 small)
Organic Pear (1 small)
Pomegranate Seeds (2 tablespoons)
Walnuts (2 tablespoons)
Slivered Almonds (2 tablespoons)
Pumpkin Seeds (2 tablespoons)
Shredded Coconut (1 teaspoon)
Chia Seeds (1 tsp)
Orange (1 small)
Cinnamon
Nutmeg
INSTRUCTIONS
- Wash the fruit and peel apple. Dice the apple and pear.
- Put in a small pot with cinnamon and 1 tablespoon water and cover with lid. Cook on low heat for 5 minutes until a little soft.
- Next take your walnuts, almonds and pumpkin seeds and put on dry pan (no oils, no water). Put on a low heat and monitor so it doesn’t burn.
- In the meantime, pour 1 cup kefir into your bowl, 1 tsp chia seeds and about 1/2 tsp cinnamon and mix well.
- Next squeeze the juice from your orange into the kefir. This will take away from the tartness of the “plain” flavor. Mix well.
- Your apple/pear mix should be ready now so drain any water and add to the top of the bowl.
- You can either buy de-seeded pomegranate seeds or buy a whole one. If you buy a whole one then cut horizontally down the middle and scoop out in a bowl of water. The seeds will go to the bottom of the bowl and everything else will float to the top making for easy removal at the end. Add the seeds to the bowl.
- Add the toasted walnuts, almonds and pumpkin seeds.
- Sprinkle with cinnamon and nutmeg (optional) and coconut flakes (also optional).
- Enjoy!!
