Healthy Almond Flour Blintzes, Crepes or Nalesniki
Whether you know them as blintzes, crepes or nalesniki, this healthy version uses almond flour and will have you making them on a regular basis.
This is definitely a dish that is more popular in Europe (Nalesniki are Polish, Crepes are French, Blintzes originate from Jewish cultures) and I’m shocked it hasn’t become more popular in American culture. It is actually very easy to make, basically equivalent to a pancake, and you can stuff them with anything!
The biggest different between a crepe and blintz/nalesnik is how they are folded. The latter are rolled which is what we are making today! And typically they are filled with a white cheese such as a farmer’s cheese mixed with sugar. Being that I always look for healthier options, we are keeping this sugar free but trust me, you won’t even know!
INGREDIENTS
BATTER (makes about 10-12 nalesniki/blintzes)
Almond Flour (2 cups)
Eggs (6)
Almond Milk (1 1/4 cup)
FILLING/TOPPINGS OPTIONS
Farmer’s Cheese (with or without a teaspoon of honey)
Berries from this recipe, minus the fiber (unless you want fiber then add it!)
Chocolate sauce
Honey
INSTRUCTIONS
- Mix the almond flour and eggs well together.
- Add in the milk slowly and keep mixing. Blend very well to avoid any clumping.
- Put a little butter on heated pan. Then using a ladle, evenly spread out the mixture.
- Cook about 30-45 seconds on each side.
- Add in farmer’s cheese filling and top with fruit!
