Veggie and Feta Egg Bake
This veggie and feta egg bake is very versatile because you can use basically any ingredients that you have on hand. I do recommend the ones I used because I think they complimented each other well but definitely have fun with cooking! If you’re in the mood for peppers, I think sliced red peppers would work great here. Mushroom fan? Def go for it.
I also love that you can make this for any meal- breakfast, lunch or dinner. I actually had this for dinner the other day and found it very filling. You can make it purely vegetarian or you can add some bacon to it as well.
Let’s get started!
INGREDIENTS (serves 2)
Russet or Idaho Potatoes (2, sliced on mandolin)
Zucchini (1, medium shredded on grater)
Leek (1/4 cup, thinly chopped)
Jalapeno (1/4, diced)
Tomato (1 small, thinly sliced)
Basil (fresh, 4-5 leaves)
Eggs (4)
Feta (small cubes, 2 tablespoons)
Bacon (3 slices chopped, optional)
SPICES
Cayenne
Chili
Sweet Paprika
Black Pepper
Olive Oil (1 tbsp)
INSTRUCTIONS
- Preheat oven to 400F
- First prepare the potatoes by slicing and coating in olive oil, paprika, cayenne and chili powder. Next put parchment paper on cooking pan and lay out the slices and bake 10 minutes. After 10 minutes, take out the parchment paper and bake another 15 minutes or until golden and crispy. More detailed directions here except cut them thicker than the chips.
- While the potatoes are baking, shred zucchini and squeeze out water. Thinly slice the leek and chop the jalapeno.
- Once potatoes are done, take a baking dish and lay them out on the bottom as per the image below. You can layer them but you don’t want too many gaps between them.
- Next layer the shredded zucchini and then the leek and jalapeno.
- Sprinkle the feta cheese and bacon (optional) all over the dish.
- Make little indents with a spoon or your finger for where you want the eggs to go. This prevents the yolk from sliding to the side.
- Add the eggs.
- Layer the tomato slices on top.
- Bake at 400F for 15 minutes covered. Then uncover and broil on high for another 5 minutes.
- Add the fresh basil and fresh black pepper once ready to serve!
