    Gluten-Free Sugar-Free Richest Brownies Ever Recipe

    As always, I am trying to find ways to enjoy my favorite treats in a healthy way, which is exactly what I did here with the Richest Brownies Ever! These brownies are inspired by Ambitious Kitchen who I have been following forever! I combined two of her recipes, modified a bit and then added my own twist. Hope you like them!

    Ingredients

    Zucchini (1)
    Almond Butter (1/2 cup)
    Egg (1)
    Almond Flour (3 tablespoons)
    Honey (3 tablespoons) (or 1/3 cup coconut sugar or brown sugar but I made this sugar free using just honey)
    Baking Soda (1/2 tsp)
    Vanilla Extract (1 tsp)
    Salt (1/2 tsp)
    Cacao or High Grade Cocoa (1/2 cup)
    Dark Chocolate Chips (1/3 cup)
    Almond Oil or Coconut Oil (2 tablespoons)
    Orange Zest (1 tsp)
    Walnuts (optional)

    Instructions

    1. Preheat oven to 350 degrees F. Line an 8×8 inch pan with parchment paper.
    2. Shred zucchini on grater. Then make sure to squeeze out all excess water in paper towel.
    3. Add in egg, almond butter, vanilla extract and honey. Mix well.
    4. Next add in almond flour, baking soda and salt. Mix well.
    5. Next add in the cacao or cocao. Mix well until completely blended.
    6. Add in the almond or coconut oil and mix.
    7. Fold in the chocolate chips and walnuts.
    8. Pour into pan and top with more walnuts if you’d like.
    9. Sprinkle the orange zest on top and use a toothpick to blend and distribute around the batter.
    10. Bake for 30 minutes, toothpick in center should be almost clean (not 100% because you want them moist).

    Once done baking, let sit and cool. Then cut and enjoy!

Today I met up with friends for a business chat at THAT viral matcha spot!
As someone who drinks high quality matcha and makes her own at home most of the time- was it worth it??
YES! the matcha is super high quality, the price is fair and even reasonable for what you’re getting! But beware, 6 grams of matcha is above average and you will definitely feel it if you’re drinking it on an empty stomach (like I did 🙃)

•Milk options: no “clean” homemade milk alternatives so i opted for whole milk (my go-to lately)
•Price: competitive & reasonable for the quality
•Quality: A+

Payton (@paipaiwellness) asking how I’m going to celebrate after our last final of this semester for Acupuncture grad school and my answer really was - i have an acupuncture session booked!

Acupuncture is not just for aches and pains (although amazing for that too)! 
Working, studying and feeling stressed depletes our body’s Qi (energy) which can then cause your Wei Qi (defensive qi, which keeps you healthy from outside pathogens) to deplete as well! 
Acupuncture helps to strengthen your Qi- keeping your body in balance to help keep you healthy! Can’t wait for my session!
