Gluten-Free Sugar-Free Richest Brownies Ever Recipe
As always, I am trying to find ways to enjoy my favorite treats in a healthy way, which is exactly what I did here with the Richest Brownies Ever! These brownies are inspired by Ambitious Kitchen who I have been following forever! I combined two of her recipes, modified a bit and then added my own twist. Hope you like them!
Ingredients
Zucchini (1)
Almond Butter (1/2 cup)
Egg (1)
Almond Flour (3 tablespoons)
Honey (3 tablespoons) (or 1/3 cup coconut sugar or brown sugar but I made this sugar free using just honey)
Baking Soda (1/2 tsp)
Vanilla Extract (1 tsp)
Salt (1/2 tsp)
Cacao or High Grade Cocoa (1/2 cup)
Dark Chocolate Chips (1/3 cup)
Almond Oil or Coconut Oil (2 tablespoons)
Orange Zest (1 tsp)
Walnuts (optional)
Instructions
- Preheat oven to 350 degrees F. Line an 8×8 inch pan with parchment paper.
- Shred zucchini on grater. Then make sure to squeeze out all excess water in paper towel.
- Add in egg, almond butter, vanilla extract and honey. Mix well.
- Next add in almond flour, baking soda and salt. Mix well.
- Next add in the cacao or cocao. Mix well until completely blended.
- Add in the almond or coconut oil and mix.
- Fold in the chocolate chips and walnuts.
- Pour into pan and top with more walnuts if you’d like.
- Sprinkle the orange zest on top and use a toothpick to blend and distribute around the batter.
- Bake for 30 minutes, toothpick in center should be almost clean (not 100% because you want them moist).
Once done baking, let sit and cool. Then cut and enjoy!
