Farmer Cheese with Veggies on Sourdough Toast
For my third Instagram live with Lifeway Kefir I wanted to incorporate another one of their products outside of just kefir. Lifeway also produces Farmer Cheese and so the recipe for farmer cheese with veggies on sourdough toast was born.
You can find my other recipes with Lifeway Kefir here and here. I love their products since they support gut health. This recipe is very versatile since it can eaten on bread like I am doing or it can be served as a dip with crackers or crudites.
I also always opt for sourdough if I eat bread since it is healthier. Sourdough is made using a fermented starter which includes prebiotics and is beneficial to gut health; it is more nutritious and digestible.
I grew up eating farmer cheese with radishes and scallions and this recipe builds off of that! It’s so much fun to share this easy recipe that reminds me of my childhood. Also, if you missed my live and want to see how I make everything firsthand, you can see the video here.
INGREDIENTS
Lifeway Farmer Cheese (8 oz)
Lifeway Plain Kefir (1 tbsp)
Radishes (3)
Scallion (2-3 pieces)
Pepper (1/2)
Salt & Pepper
Sourdough Bread (2 slices)
INSTRUCTIONS
- Wash all vegetables and dice into small pieces.
- Add chopped veggies to a bowl and then add in the farmer cheese and kefir and mix well.
- Season with salt and pepper to your tasting.
- Top over fresh or toasted sourdough bread.
- Enjoy!
