The Softest Banana Almond Flour Cookies Recipe
The search for amazing and healthy cookies continues with this softest banana almond flour cookie recipe! As you can see here and here, I am on a cookie mission! I’m a huge fan of soft cookies and am very pleased with how these came out. They are sugar free and gluten free too!
Ingredients
Bananas (2, very ripe)
Almond Flour (3/4 cup)
Cinnamon (1/2 teaspoon)
Coconut Oil (1 1/2 teaspoon)
Baking Soda (1/4 teaspoon)
Salt (pinch)
Dried Cranberries or Dark Chocolate Chips (I split the dough in half and did both)
Directions
- Preheat oven to 350F and line baking sheet with parchment.
- Mash bananas in bowl until creamy.
- Add in cinnamon, baking soda, coconut oil and salt and mix well together.
- Then add in either chocolate chips or dried cranberries. If you’d like to make both like I did then split the “dough” in two.
- Put spoonfuls of dough onto baking sheet and smash down a little, you want them to look “full”.
- Bake for 15 minutes until tops and edges are golden.
- Let cool at least 10 minutes and enjoy!
