Healthy Black Bean Dip
Truth be told I’ve never made a bean dip before but I was looking to make something with my can of black beans and wow, new obsession! This black bean dip has a healthy spin on it but is not lacking in flavor. Have it with veggies or even in a salad!
Ingredients
Black Beans (1 can)
Tomatoes (2 small or 1 medium sized)
Shallot or Red Onion (1 shallot or 1/3 red onion)
Garlic (1 clove)
Cilantro (1/3 cup)
Salt (1 teaspoon)*
Cayenne Pepper (1/4 teaspoon)
Chili Pepper (1/2 teaspoon)
Lemon or Lime (juice from 1/2 lemon/lime)
Olive Oil (2-3 tablespoons)
Apple Cider Vinegar (1 tablespoon)
Plain Greek or Goat Milk Yogurt (2 teaspoons)
Mix all ingredients excluding the tomatoes in a food processor. Fold in chopped tomatoes last with spoon.
*(seasonings can be adjusted to your taste)
