Healthy “Fig Newtons” Recipe
Let me preface by saying I had all intentions of making this a healthy “fig newtons” recipe post but then I realized I was out of figs! No worries, I was determined and used dates and apricots (came out so good), but obviously feel free to use figs instead!
I just started reading, “Feeding You Lies” by Vani Hari and she talks about Fig Newtons in the first chapter and how unhealthy they actually are. I remember eating Fig Newtons as a kid and my family knew they weren’t necessarily healthy but we definitely thought they were better than let’s say Oreos. That “fruit” will get you every time!
But we live and more importantly, we learn. So after Fig Newtons came into my head, I was determined to make a healthier version! Not one to really toot my own horn but wow! These are so great to have for snacks on the go or road trips. Pack these up for your kids for school too, they will definitely love them.
INGREDIENTS
OUTSIDE DOUGH
Almond Flour (2 cups)
Date Sugar (3 tbsp)
Eggs (2)
Baking Soda (1 tsp)
Butter (6 tbsp at room temp)
Salt (pinch)
FILLING
Dried Dates, Apricots or Figs (or a mix) (1 cup)
Fresh Juice from Lemon (1/2 lemon)
Cinnamon (1 tsp)
Coconut Oil (1 tsp)
INSTRUCTIONS
- Preheat oven to 350F.
- Mix all dough ingredients well together either by hand or in a food processor with a dough blade.
- Put dough in fridge while you make the filling.
- Add all ingredients of the filling into a food processor and blend well until you have an almost paste.
- Next take a piece of parchment paper and lay it horizontally. Put out half the dough on the bottom half and then fold over the top. Now using your hands or a rolling pin, roll out the dough until it is flat.
- Open the parchment paper and add the filling to one side (as shown in picture below). Fold the other side of dough on top of it.
- Cut into squares and transfer to baking pan!
- Do the same steps with the balance of the dough and filling.
- Bake for 20 minutes or until golden brown!
