Easy and Healthy Veggie Rice Stir Fry

So the other day I was craving Chinese food and decided to put my own healthy spin on it, let me tell you, you will never want take out again. The most important thing to me is that I do not feel bloated after this, the taste is amazing and flavorful and I’m actually full after!
Please note I did use canned water chestnuts but try to avoid canned foods whenever possible, the cans are lined with BPA which is harmful to our health. A lot of cans now have “BPA free” on their labels so look out for that.
What is Miracle Noodle Rice made from?
The “Love My Rice” Miracle Rice that I use is a blend made from white rice and konjac root. Konjac is a type of yam and it is used to make a soluble dietary fiber. This rice is gluten-free, non GMO, vegan and paleo friendly. It tastes just like regular rice but has an up on the fiber! Wins all around!
INGREDIENTS
Miracle Rice “Love My Rice” Ready to Eat Rice (1 packet)
Organic Broccoli (1 cup)
Organic Baby Bella Mushrooms (5-6 mushrooms, sliced)
Sliced Water Chestnuts (2 tablespoons)
Organic Baby Corn (in jar or canned, 1/4 cup)
Garlic (1 small clove)
Red Pepper Flakes(dash)
Liquid Aminos (1 tablespoon)
Sesame Oil (2 tsp)
INSTRUCTIONS
- Broccoli- Wash and then steam or boil for 3 minutes so it is a little crisp.
Mushrooms- wash, then peel if you want, cut into slices and cook with nothing added in small skillet for about 5 minutes. - Rinse the baby corn and cut into small pieces and rinse the water chestnut as well.
- Heat up 1 tsp of the sesame oil with the garlic on a skillet.
- Add in the rice directly from packet. Mix well.
- Next, add in the baby corn and water chestnuts and cook for about 2 minutes.
- Now sprinkle on the red pepper flakes, balance of sesame oil and liquid aminos and mix.
- Add in mushrooms and broccoli last (since they were already cooked) and mix in with sauce.
- Taste and add seasonings if needed.
