Everything Cookies for the Win
I decided to just sort of throw in all these ingredients that sounded good to me and “everything monster cookies” definitely for the win!
This recipe came to be because I had left over almond pulp from my almond milk. I decided to pretend it’s almond flour and just add my normal cookie ingredients like here but then one thing lead to another and bam, we have “everything cookies!”
If you don’t have almond pulp then definitely use almond meal or almond flour, either will work. Oh did I mention these are gluten free and free from any processed or refined sugars?? Like I said, everything monster cookies for the win!
Ingredients
Almond Pulp, Meal or Flour or a mix of all (1 1/2 cups)
Almond Butter (2 tablespoons)
Banana (1-2)
Egg (1)
Sunflower Seeds (2 tablespoons)
Pumpkin Seeds (2 tablespoons)
Chia Seeds (2 tablespoons)
Sea Salt (1/2 teaspoon)
Baking Soda (1/2 teaspoon)
Vanilla Extract (1/2 teaspoon)
Cinnamon (1/2 teaspoon)
Dried Cranberries (try to get unsweetened but very hard to find) (handful)
Dark Chocolate Chips (handful)
Instructions
- Preheat oven to 350F and line baking sheet with parchment paper.
- Put all ingredients EXCLUDING the dried cranberries and chocolate chips in a bowl and mix well.
- Fold in the dried cranberries and chocolate chips.
- Put in refrigerator for 10 minutes.
- Using a spoon, put heaping spoonfuls of dough on baking sheet.
- Bake for 15-17 minutes.
