Homemade Clam Chowder Recipe
My mom recently had a craving for Clam Chowder but when you go out to get it, it is very hit or miss and usually very creamy and heavy. So what did we do? We modified it of course! Take a look below at a healthier version of Clam Chowder and hope you enjoy this hearty soup filled with veggies, clams and love!
Ingredients
2 Cups of Broth* (linked, I had some frozen that I put in)
Potatoes
Carrots
Celery
Celeriac aka Celery Root
Pepper
Allspice
Bay Leaf
Clams (in jar, not can- canned ones aren’t always cleaned and can have sand in them)
Clam Juice
Heavy Cream
Instructions
Wash and Peel all the vegetables.
Chop the carrots, potatoes, celery and celery root into pretty small cubes.
Put on large skillet with clarified butter- about 5-10 minutes, stir constantly.
Add in 2 cups of broth. Let start to simmer.
Throw in a pot with the pepper and allspice.
Simmer 20 minutes.
Add in the clams.
Next add in the clam juice (8 oz)
Mix well and let simmer for about 10 minutes.
Add in 2 tablespoons heavy cream at the end. Mix Well.
