Fiber Cookies
These fiber cookies are a great natural way to incorporate more fiber into your diet. When you are craving something sweet these will definitely satisfy that and they are great to bring on the go or have after your morning fruit.
They are made with almond flour making them gluten free and they don’t have any processed sugar either, the sweetness comes from honey and prunes. When you are buying the prunes or any dried fruit, please make sure there are no adde sugars as well.
When I got my colonic, the therapist actually advised that I incorporate more fiber into my diet. I was surprised because I felt like I was getting enough but I took her advice seriously and here we are- fiber cookies made from natural ingredients.
INGREDIENTS
Almond Flour or Meal (2 cups)
Flax Seed (ground, 2 tbsp)
Chia Seeds (ground, 2 tbsp)
Prunes (1/2-3/4 cup)
Psyllium Husk (1 tbsp)
Baking Soda (1 tsp)
Cinnamon (1 tsp)
Egg (1)
Honey (1 tbsp)
Coconut Oil (1 tsp)
INSTRUCTIONS
- Preheat oven to 350F and line baking pan with parchment paper.
- Mix all ingredients in food processor.
- If you don’t have a food processor then blend prunes in a blender and add to a bowl with the balance of the ingredients and hand mix well.
- Spread out evenly on parchment paper and bake for 15 minutes.
