Truffle Pasta Recipe
Let’s talk pasta! You might notice that my website lacks in pasta recipes but when I do make it, I like to keep it pretty simple like with this truffle pasta recipe!
The reason for my lack of pasta recipes is for 2 reasons- first off being that I just don’t love it as much as other carbs, say for example fresh bread or pizza. A fresh sourdough bread is delicious and beneficial in that it also has probiotics which are good for your gut. Pizza, well I just love the flavors and toppings. Secondly, a lot of products in the US made from flour or wheat come from crops that are sprayed with pesticides. This is a big problem and makes me want to stay away from these foods. What I do when I do want a yummy pasta dish is buy pasta from Europe, and no it’s not hard to find!
Personally my favorite place to buy pasta is Home Goods. They always have a great selection of pasta imported from Italy as well as other ingredients you will need such as olive oil, truffle oil and preserved black truffle in jars. I also am picky with the shape of the pasta (but aren’t we all!?) The one I am using in this recipe is called Girelle and by the brand Di Bari. So let’s get to it shall we!
INGREDIENTS
Organic Imported Pasta
Truffle Preserves
Fresh Garlic
Fresh Basil
Shredded Mozzarella
Olive Oil
Truffle Oil
Black Pepper
INSTRUCTIONS
- Cook 1 cup pasta according to the instructions. (a little al dente is healthier)
- Drain water and keep in warm pot.
- Add in a tsp of the truffle preserves, 1 clove of pressed garlic, a few leaves of fresh basil (chopped) and 1/4 cup shredded mozzarella. Mix well.
- Drizzle with olive oil and a little truffle oil (about 1 tsp) and top with black pepper. You can also add parmesan cheese.
