Baked Figs with Goat Cheese and Hazelnuts
It’s fig season! I usually eat them in dried form but right now they are in season and I am loving it. These baked figs with goat cheese and hazelnuts are a yummy treat that can be made as an appetizer or snack!
Just to give you a little background on figs, they are an amazing source of fiber (love that!) and are high in natural minerals including potassium, magnesium, calcium, iron and copper. They are also a good source of vitamin C, L and B6.
Figs can be eaten raw- just wash them and cut off the stem. I love to have them in the morning with my fruit or throw them in a salad. You can also grill or bake them like in the below recipe.
INGREDIENTS
Fresh Figs (however many you want, local/organic)
Goat Cheese
Hazelnuts
Olive Oil
Lemon
Honey
INSTRUCTIONS
- Preheat oven to 350F and line a pan with parchment paper.
- Wash the figs and cut off the stems.
- Next make an “x” cut onto the top of the figs.
- Insert the goat cheese into the opening that you just made.
- Cut the hazelnuts in half and insert into the opening with the goat cheese and then sprinkle some around on the pan as well.
- Squeeze some fresh lemon juice over them and then drizzle with olive oil.
- Bake for 10-15 minutes.
- Remove, drizzle with honey and serve warm!
