Best Homemade Potato Chips
As much as I love my cookies, and I do as you can see here and here, I love a good savory snack and one of my favorites ever is potato chips, so of course, I had to make my own healthy ones!
This is probably one of the easiest snacks to make and requires the most limited amount of ingredients, one if you don’t count the seasonings.
You’ll want to pay attention to the instructions when I talk about the baking process because that is the key to making these extra CRISPY!
Ingredients
Potatoes- if you are using Idaho then peel them, for the red skin ones, I would wash and scrub them and leave the skin on. To make a bowl of chips, I recommend about 3 medium sized potatoes.
Olive Oil- about 2-3 tablespoons
Paprika- 1/2 teaspoon
Chili Powder- 1/2 teaspoon
Rosemary- 1/2 teaspoon
Salt (1/4 teaspoon)- save for later
Instructions
- Pre-heat oven to 400F and cover baking pan with parchment paper that you crinkled up in a ball and re-opened. This will ensure the potatoes won’t lay as flat on the pan.
- Wash and scrub the potatoes. As mentioned earlier, if they are Idaho potatoes then peel and if red skin then keep skin on.
- Using a mandolin, slice the potatoes on the lowest setting to make them super thin.
- Put the slices in a bowl and add olive oil and mix to coat the potatoes. They shouldn’t be soaked in the olive oil.
- Next add in the seasonings you like, the chili powder, paprika and rosemary make for a nice mix in my opinion. You can also do just rosemary. (Salt comes after they are baked because vegetables release water when salt is added and we don’t want them soggy.)
- Once coated, lay out the slices on the parchment. You can have them overlap a little but try not to have multiple on top of one another.
- Bake at 400F for 12 minutes.
- Take pan out of the oven and carefully remove the parchment paper from beneath the potatoes. (The reason you even used it is because otherwise they would have stuck to the pan.)
- Place the slices back on the pan evenly again and bake for another 7 minutes. They should be pretty golden by now.
- By now the potatoes are cooked and you want to crisp them up. Turn off the oven temp and only put Broil on Low. Broil them for about 5 minutes but watch them so they don’t get too dark because those will taste bitter.
- Remove from oven and let cool around 5 minutes and sprinkle salt on top.
