Easiest Baked Artichoke Recipe
I love artichokes, especially baked or grilled whole ones! Don’t get me wrong, the ones from the jar or can are yummy in salads too but something about eating a fresh one- yum! When I was in Napa over a year ago I had the best grilled artichoke there and ever since then I’ve been on a mission to either find a restaurant in NYC that makes them just as well or to make them on my own! Finally I have achieved my goal!
Do not let these yummy, fiber packed veggies scare you! They are actually very easy to make and don’t take that much prep time! They are also sooo yummy that I feel guilty eating them until I remember they are nothing but good for you!

INGREDIENTS
whole, fresh artichokes
olive oil
lemon
salt and pepper
PREP
Wash the whole artichokes and then cut off the bottom part of the stem and then the top piece, if you have artichoke with particularly spikey outside “leaves,” feel free to cut those tips as well.
Next cut them in half
Scoop out the middle portion which is said to be bad for you and poisonous (this is the part that looks “furry”) and the purple pieces.
This is the hardest part of the prep work and it’s not even that bad!
Sprinkle lemon juice to keep from browning as you continue to prepare the rest.
Season with olive oil, salt and pepper.
Put middle part up in a baking pan and bake for 10 min at 400 degrees Fahrenheit (keep an eye on it because it will start to burn)
After 10 min (this browns them a little), flip so the middle is face down and cover in foil.
Now bake at 400 for 35-40 minutes (a fork should be able to be inserted easily).
Take out and enjoy!!
